Preheat oven to 375°F. Line a small baking dish with parchment paper
In a large bowl, combine all meatloaf ingredients. Mix until fully combined but do not overwork
Shape into a loaf and place in prepared dish. Bake for 45–50 minutes or until cooked through and golden on top
Meanwhile, steam or boil cauliflower florets until tender (about 10–12 minutes)
Drain well, then blend or mash with coconut milk, oil, and sea salt until smooth and creamy
Let meatloaf rest 5–10 minutes before slicing. Serve with a generous scoop of cauliflower mash and a sprinkle of herbs on top
