Turkey Meatloaf with Cauliflower Mash

Ingredients
  

For the Meatloaf:

  • 1 pound ground turkey pasture-raised preferred
  • 1/2 cup grated zucchini squeeze out moisture
  • 1/2 cup grated carrot
  • 2 tablespoons coconut flour
  • 1 tablespoon finely chopped parsley
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • Optional: 1 garlic clove minced (omit for strict AIP)
  • 1 tablespoon olive oil or bone broth

For the Cauliflower Mash:

  • 1 head cauliflower chopped into florets
  • 2 tablespoons coconut milk or bone broth
  • 1 tablespoon coconut oil or ghee if reintroduced
  • Sea salt to taste

Instructions
 

  • Preheat oven to 375°F. Line a small baking dish with parchment paper
  • In a large bowl, combine all meatloaf ingredients. Mix until fully combined but do not overwork
  • Shape into a loaf and place in prepared dish. Bake for 45–50 minutes or until cooked through and golden on top
  • Meanwhile, steam or boil cauliflower florets until tender (about 10–12 minutes)
  • Drain well, then blend or mash with coconut milk, oil, and sea salt until smooth and creamy
  • Let meatloaf rest 5–10 minutes before slicing. Serve with a generous scoop of cauliflower mash and a sprinkle of herbs on top
