In a medium bowl, combine tigernut butter, shredded coconut, coconut flour, collagen (if using), sweetener, cinnamon, and sea salt
Mix well until a thick dough forms. Add a small splash of water if it’s too dry to roll
Roll into small balls (about 1 tablespoon each)
Place on a parchment-lined plate or container and refrigerate for at least 20 minutes to firm up
Store in an airtight container in the fridge for up to one week, or freeze for longer storage
