Tigernut Butter Energy Balls

Ingredients
  

  • 1/2 cup tigernut butter well-stirred
  • 1/3 cup shredded coconut unsweetened
  • 1 tablespoon coconut flour
  • 1 scoop collagen peptides optional
  • 1 tablespoon maple syrup or date paste omit for strict AIP
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt
  • 1 –2 tablespoons water as needed to bind

Instructions
 

  • In a medium bowl, combine tigernut butter, shredded coconut, coconut flour, collagen (if using), sweetener, cinnamon, and sea salt
  • Mix well until a thick dough forms. Add a small splash of water if it’s too dry to roll
  • Roll into small balls (about 1 tablespoon each)
  • Place on a parchment-lined plate or container and refrigerate for at least 20 minutes to firm up
  • Store in an airtight container in the fridge for up to one week, or freeze for longer storage
