Ground Beef & Cauliflower Rice Bowl

Ingredients
  

  • 1 pound grass-fed ground beef
  • 3 cups cauliflower rice fresh or frozen
  • 1 tablespoon coconut oil or avocado oil
  • 1/4 cup finely chopped onion optional
  • 1 teaspoon garlic powder or 1 clove grated garlic omit if sensitive
  • Sea salt to taste
  • Juice of 1/2 lime or lemon
  • 1/2 cup shredded carrots or spinach
  • Optional: avocado slices fresh herbs (cilantro, parsley), fermented veggies, or a drizzle of olive oil

Instructions
 

  • In a large skillet, heat oil over medium heat and sauté onion and garlic until fragrant
  • Add ground beef and cook until browned, breaking it apart with a spoon
  • Season with sea salt and stir in shredded carrots or greens to wilt slightly
  • In a separate pan, heat a little oil and sauté cauliflower rice for 5–7 minutes until tender but not mushy
  • Squeeze fresh lime juice over both the beef mixture and cauliflower rice
  • Assemble bowls by layering cauliflower rice, seasoned ground beef, and toppings of choice
  • Serve warm and enjoy the comfort of food that’s made to heal
